What’s this? A potluck twist??? That’s right: I’m over store-bought coconut cakes. Now I’m making them myself. For my submission to the 2026 Small Web Virtual Potluck, I present:

As a quick summary of context, which is now several layers deep at this point (just like this cake, wha-oh), I wrote an entry of Tiger Tracks which caused somebody to comment about Pepperidge Farm’s Frozen Coconut Cake, which I then tried and wrote a post about, which then caused somebody else to comment with a recipe for a real coconut cake.
Instantly I knew it would be my potluck dish this year.
I’m going to do a longer write-up as a separate post, because making this cake was a two-day process and was far more dramatic than it had any right to be. For now, the list of ingredients should suffice:
Special shout-out to Mrs. Skep who, despite being scheduled to work all weekend, put up with me wrecking the kitchen and even did the ton of dishes I generated, and whose only request was recognition on this post. Not just one line, though, but a whole paragraph, which is what I am giving her, as you can see. I recognize that I am dragging this gag out a bit, but it is well-deserved since she did also make dinner and fold laundry while I was futzing with icing, and she even tried a small slice of cake despite disliking coconut (but she liked this!).
